Right now in the UK, we are in the thick of tomato season.
...and I'm not complaining.
Recently I had a wonderful box of tomatoes from Isle of Wight Tomatoes and....wow!
However, I've got to make a confession. I am not always the biggest fan of eating tomatoes raw and on their own. It's certainly not something I'd snack on.
However, sliced and combined with sliced mozzarella, drizzled with balsamic glaze and sprinkled with chopped fresh basil - what a beautiful summer salad!
If you're looking for something a bit more hearty you should TOTALLY try tray roasting your tomatoes and turning them into a pasta. So easy and delicious.
